How is #ADDRESSEE populated...?

I'm having a few funnies coming out on our default Letterhead using the #ADDRESSEE field.
Basically, for a custom contact type (created for us by FWBS I should mention!), we're finding that we get both the Addressee (either Associate or Contact) and the Contact Name come out as part of the #ADDRESSEE field, so it looks like:
Miss F Jones (Addressee on Associate) Miss Fiona Jones (Contact Name) Address 1
Address 2
Address 3 Post Code
I can't work out if this is configurable anywhere at our end, or why it would be happening differently for our custom contact type - which is cloned from Individual - compared to standard Individual contacts.
So, under what circumstances does the #ADDRESSEE bring through both contact name and addressee?
